Oatmeal Berry Bite Pistachio Cookies

Ingredients

3 Tbsp.
butter
1/4 cup
apple sauce
1
large egg
1/3 -1/5 cup
Swerve Sweetener (substitute honey or maple syrup)
1/3 cup
whole wheat flour
1/2 tsp.
baking soda
1/2 tsp.
baking powder
1 tsp.
cinnamon
1/4 tsp.
nutmeg
1 1/2 tsp.
chia seeds
1 1/2 cups
old fashioned oats
1/3 cup
SunRype FruitSource Bites (any flavor)
1/4 cup
pistachios, shelled (substitute any other type of nut)

Instructions

In your mixer, beat together butter, apple sauce and egg. Add sweetener of choice and beat well. Add flour, baking soda, baking powder, cinnamon, nutmeg, chia seeds and oats. Mix until just combined. Add in SunRype FruitSource Bites and pistachios, and mix until incorporated into the dough. Spray a cookie sheet with cooking spray and scoop out 1.5 inch balls. Bake for 8-10 minutes or until golden brown. Let cool.  Enjoy!
