FruitSource Banana Coconut Mini Muffins

1 1/2 cups
all-purpose flour
1 cup
1 tsp.
baking powder
1/2 tsp.
baking soda
1/4 tsp.
8 Tbsp. (1 stick)
unsalted butter, melted and cooled
extra large egg
1/2 cup
whole milk
1 tsp.
1/2 cup
ripe banana, mashed (1/2 banana)
1/2 cup
ripe banana, diced medium (1/2 banana)
1/2 cup
walnuts, diced small
1/2 cup
SunRype FruitSource Bites or FruitSource Bar (cut up) (any flavor)
1/2 cup
unsweetened shredded coconut


Preheat oven to 350°F. Line 24 mini muffin cups with paper liners. Mix flour, sugar, baking powder, baking soda and salt in a bowl. Add melted butter and blend. Add egg, milk, vanilla and mashed banana to the dry mixture. Scrape the bowl and blend well. Don’t overmix. Fold the diced bananas, walnuts, chopped up SunRype FruitSource pieces and coconut into the batter. Spoon the batter into the paper liners, filling each one to the top. Bake for 20 to 25 minutes or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan and serve.
